When Fat John’s Pizza owner John Lamar and manager Angela Jackson planned their opening week, they had no idea how many locals were waiting to try their pizza.
According to Lamar, when Fat John’s Pizza opened recently, the business “had approximately 75 orders by noon,” which required them to close before 2 p.m. due to his deck-style pizza oven experiencing difficulty keeping up with the demand. The amount of customers for the new business was “beyond his imagination,” Lamar said.
Lamar, formerly a painter at an auto body shop, and Jackson, a coworker from the same business, opened Fat John’s Pizza on June 5. According to Lamar, one of the secrets to the flavor of their New York-style pizza is due to it being prepared in a gas-fired, brick-lined oven with a stationary deck, as opposed to a conveyor belt, like models used by some major pizza chains. Due to demand, Lamar ordered a second oven. While Lamar is now ordering his dough, he plans to purchase a mixer to make his own dough soon. He also plans to purchase 21-inch pans to provide additional size pizzas in the near future.
The business is now offering 18-inch pizzas with fresh ingredients that, according to Jackson, can “feed four hungry people.”
Lamar recommends the Italian-style Margherita Pizza, which is “not focused on the cheese, but more focused on the crust.” It features slices of mozzarella cheese covered with fresh basil leaves, drizzled with olive oil and topped with Roma tomatoes. Jackson recommends the more American Meat Lovers Pizza, which is loaded with pepperoni, Italian sausage, beef, ham bacon and cheese. If you would like to spice things up a bit, Lamar recommends trying his Buffalo Chicken Pizza. There’s a “little heat to it, but not too much,” he said. The menu also has salads, appetizers and wings with seven different dipping sauces. Dessert pizzas and beer are coming soon.
Lamar and Jackson are thankful for those who have been coming out in support of Fat John’s Pizza. They say the delays recently experienced are temporary and they look forward to seeing everyone again.
Fat John’s Pizza is open for dine-in or carryout, with plans for delivery in the future, at 4527 Lafayette St. in Marianna. Hours are 10:30 a.m. to 2 p.m. and 4-8 p.m. Tuesday-Thursday. On Fridays and Saturdays, morning hours are the same, but evening hours are extended to 9 p.m.
